The Uttar Pradesh state is rich in its cultural heritage and tradition over the decades. The land is considered to be purity of soul and its beautiful architectures make it a heavenly place. The art of cooking on slow fire started in an era of Mughals slowly garnered attention across the world.It gives perfection to the taste and makes it more irresistible. The culinary range includes delicious vegetarian and nonvegetarian dishes. Every region of Uttar Pradesh offers an array of delicacies ,be it Kanpur, Lucknow, Rampur, Varanasi, Mathura, Banaras etc. Mughlai and Awadhi dishes are famous all over. It is also known as the land of art, music and dance where Kathak, Mushaira, Ghazal have been an identity of the State. To get a flavors and taste of Uttar Pradesh Cuisine, UP Tourism board in association with Renaissance Hotel, Powai organised UP Food Festival in Mumbai last week
The special arrangement was made @Lake View Cafe overlooking the Powai Lake with live ghazal performance by Popular singer Anuradha Singh.
Chef Yogendra was in charge of Uttar Pradesh Food Festival, he greeted us at the entrance and made us comfortable. He is born and brought up in Uttar Pradesh.Being a local, he guided us and explained the origin of the dishes and how it is prepared.
We started off with Sharbat which is made of red rose petals and it helps you cool down your mind and body.
We moved on Aligarh ka Chilla, which is Chef Yogendra’s special. The stuffing is a mix of tomatoes, green chillies, potatoes. It’s hot and spicy and fillings are a great taste.
We halted at Jaunpur to savour the famous Litti Choke- Its crispy and cooked to perfection with equal quantity of mixture ,Litti is stuffed with seasoned gram flour and baked in oven .and it can be served in breakfast or as tea snack in evening
Our next stop was Faridabad ki Mathari- Its crispy and crunchy and delicious. I just loved it, however, the preparation time is around 15-20 mins but we need to have all the ingredients ready.
The last destination is Lucknow where we had sumptuous Dum biryani flavoured with Indian spices , saffron, cardamom. It is prepared Dum Pukht style also known in Awadhi Cuisine.
The Uttar Pradesh has a plethora of options that you will die for. Overall the Uttar Pradesh Food has bowled over my mind and body. We are missing so much in India. It’s time to discover and indulge in local flavors and my next trip will be straight to Uttar Pradesh
